Brick grilled lemon rosemary chicken
This is a great dish especially if you are in a hurry and just want a quick and easy dinner.
You will need the following ingredients:
- Boneless skinless chicken breasts
- 1/4 cup fresh lemon (the juice from one lemon)
- 1/4 cup extra virgin olive oil
- 3 cloves of garlic finely chopped
- Couple springs of rosemary finely chopped
- Pinch of salt and pepper
- Brick wrapped in a couple layers of aluminum foil
The first step is to lay everything out and add all the ingredients into a bowl with a wisk to combine.
After everything is mixed together you want to combine it with the chicken in a dish. I really like to trim up the chicken breasts because even the ones you buy in the store still tend to have a couple nasty pockets of fat. The breast on the right is untrimmed and the breast on the left is trimmed. As you can see the one on the left is going to lead to a better final product and better presentation.
After the breasts are trimmed up go ahead and pour the marinade over them. Put this in the fridge and let it sit for atleast 2 hours. Halfway through go ahead and flip the chicken breasts.
One thing to do while the chicken is marinating is take a regular brick and wrap it in a couple layers of aluminum foil. If you don’t have a brick laying around a cast iron skillet or a 5 lb weight wrapped in a couple layers of aluminum foil will work also.
After the chicken is done marinating remove it from the fridge and let it sit on the counter. Let your grill pre-heat on high for a good 10 minutes.
Place the chicken breast on the grill non-presentation side down first, place the brick on top, close the grill, and walk away.
Let it cook undistrubed for a good 5 minutes, flip, and put the brick back on top of the chicken. Let it cook this way for 3 minutes and then rotate the chicken breast 90 degrees and keep the brick on top of the chicken.
If you have any available put a couple slices of lemon on the grill for a minute to add to the presentation. Serve and enjoy.
