Cheesey red onions
A simple and easy side dish that tastes great. Feel free to use any type of onion and maybe even a couple shallots.
For this dish you will need:
- 4 onions quartered
- 3 cloves of garlic
- 3 sprigs of thyme
- Pinch of crushed red pepper
- 4 ounces of mascarpone cheese
- 1/2 cup of grated gruyere cheese
- 1/2 cup of grated parmigiano reggiano cheese
- 1/2 cup of panko bread crumbs
- Kosher salt and black pepper
Preheat the oven to 400 degrees. Take the quarters of the onions and break them into individual petals. Toss the onions with the olive oil, garlic, thyme, crushed red pepper, and pinch of salt and pepper. Spread the mixture out in a baking dish.
Cover the pan with aluminum foil and place in the oven for 45 minutes.
After 45 minutes remove the foil and continue to cook for 15 more minutes.
Remove the dish from the oven and stir in the mascarpone, gruyere, and parmigiano reggiano cheeses. Add another pinch of crushed red pepper, salt, and pepper.
Cover the mixture with the panko bread crumbs and place in the oven till the top is browned.
