Grilled Salsa Verde and act now I will throw in flank steak

Lately I have been in this mode of have to throw together this spice blend, I have a bunch of bottles of POM how can I use them, and all around surprisingly creative.  However, I feel this need to get back to basics every now to remind myself that there are time proven recipes that are versatile and taste amazing.  Salsa verde to me is just that.  Not only does it work thrown together with some chips as the perfect snack while decompressing and catching up on the DVR but it can go and play with the big boys like steak and seafood for a solid dinner.

Last Sunday I decided that steak tacos sound amazing so wandering through the grocery store I spied some tomatillos out of the corner of my eye.  Now to most people this is probably not a big deal but for this town I can best relate it to finding the perfect white truffle in the middle of Antarctica.  So of course I had to buy because not only were they accessible but surprisingly in good shape.

This brings me to another joy and joyness and something my next house will have no matter what.  The grills must be kept in a place where they are covered because Sunday it rained all day.  Thankfully since my grills take precedent over the truck they get the garage spot so I can grill no matter what the weather is doing (except -20 and colder because the grill does not want to work then).

For the salsa verde you will need:

  • 1 lb of tomatillos
  • 1/2 lime
  • 2 shallots
  •  2 jalapeno peppers
  • 1/4 cup cilantro
  • 2-3 cloves of garlic
  • Kosher salt and black pepper
  • High temperature oil
  • Sugar (usage to be determined)

Fire your grill up to medium and rub the shallot, tomatillos, and jalapeno peppers with oil and sprinkle some salt and pepper over them.  Throw them on the grill along with the 1/2 lime and cook till everything is softened.  Since the jalapeno, shallot, and lime would have been done quicker than the tomatillos I put them on the top shelf.

Once they are nice and soft drag them back indoors and fire up your food processor.  Dump the grilled veggies along with the cilantro and garlic into the food processor.  Clarification do not dump the lime into the food processor instead squeeze the juice into the food processor and the rest of the lime toss in the compost pail.

Take everything for a spin till fully combined.  Taste and adjust.  If it still tastes to tart then a pinch of sugar will help you out drastically.

At this point you have a perfectly acceptable accompaniment for your favorite chips.

However, salsa verde does not stop there instead if you are feeling adventurous marinade a nice piece of flank steak for a couple hours with:

  • juice of 1 lime
  • Couple TB of canola oil
  • 1 teaspoon ancho chili powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 2 cloves of garlic

Grill the steak till medium-rare and while you are at the grill why not grill some tortillas to soften them up.  Heck rub a couple poblano peppers with oil and roast them till the skins are blackened, cover for a good 10 minutes, and rub the skin off, and chop up.

Let the steak rest for a good 10 minutes, slice against the grain, and then wrap everything up in a tortilla with what other items you love in your tacos.  Me I prefer to keep them simple some salsa verde, cilantro, squeeze of lime juice, roasted peppers, and queso fresco.

Now I feel like a dirty used car salesman on a low budget Sunday morning TV show.

  1. Grilled salsa sounds like a great idea. I’ve grilled a lot of things… grilled watermelon salad, grilled vegetable chili… fun to experiment, but haven’t done salsa. Looks awesome w/ the steak tacos too.

  5. I love Salsa Verde. When I go to the market a lady makes a good one. I like it with chicken tacos or tamales.

  10. Grilling is great-it allows men that would usually run screaming from a kitchen to do some cooking. Great combination, I can only imagine how good those tortillas are!

  13. I saw Bobby Flay make this a few weeks ago–and Im not quite brave enough to work on my grill as we have snow on the ground. I love Salsa Verde! I made some a few weeks ago (only used my oven to roast) and I acted the same way you did at the store…just short of winning the lotto.

  17. I made flank steak a few weeks ago, and even though it was medium rare, it was so tough you could barely chew it!

    I think I just figured out the reason, I didn’t marinate it at all before cooking, maybe that’s it?

  18. Salsa verde is probably one of my all time favorite foods. And like you, it’s next to impossible to find a tomatillo around here. I bought some seeds and I’m going to try to grow them in some big pots.
