Pecan crusted cod

Ok if you are single and cooking for a date how do you go about explaining why you are taking pictures of food?  I have been trying to figure this out and I have nothing and so I have gone to quick snaps while she is in the other room or doing all cooking before she shows up and then taking plating pictures with leftovers. 

For this recipe you will need:

  • Cod fillets
  • All purpose flour
  • 2 eggs beaten
  • 2 cups of pecans
  • 1/2 cup of breadcrumbs
  • High temperature oil

Use either a coffee grinder or a mallet bash the heck out of the pecans till they are small pieces. 

Set up a 3 stage breading station with flour on the left, then egg, and finally pecan bits mixed with breadcrumbs.  Salt and pepper the filets and dredge into the flour, egg, and pecan.

In your favorite skillet over medium heat add a couple TB of oil. Add the fillets and cook about 4 minutes a side.

Serve and enjoy!

Not pictured is tartar sauce which uhh…I forgot to put in the picture.
