ABT (smoked cheese filled bacon wrapped jalapenos)

This is my variation of ABTs which stand for Atomic Buffalo Turds.  Sometimes instead of using the onion powder, garlic powder, salt, and pepper I like to subsitute a couple tb of my favorite rub. 

Ingredients:

  • Handful of jalapenos
  • Brick of cream cheese at room temperature
  • 1/2 cup of your favorite cheese grated (I am using a habanero cheedar)
  • Couple tb of chopped pepperoni (some leftover pulled pork or little smokies will work also).
  • TB of garlic powder
  • TB of onion powder
  • Salt and pepper
  • Bacon

First thing we want to do is prep the jalapenos.  Cut the tops off of them and then cut them in half.  Go ahead and get all the seeds and some of the veins out.  We want to be able to have as much area to work with for stuffing. 

After that in a bowl mix everything but the bacon and the jalapeno together.  You really want to make sure everything gets distributed very well.  The great thing about this is you can adjust the seasoning to whatever you want.

Put the cheese mixture into each half the hollowed out jalapeno.

Wrap a piece of bacon around each piece and secure with a toothpick. 

Place on a smoker cut side up for an hour and a half to two hours at 200-215 degrees. 

Serve and enjoy.

  3. These LOOK amazing, but two hours for finger food? wowzer!

  4. These are awesome! A trick I use to make thigs easier is to use a ziploc bag with a corner cut off to squeeze the cheese mix into the pepper.
