Tip: Testing pork rubs

I am constantly working on new rub creations.  Here is an easy tip for testing out a variety of rubs for pork.  Pick up country style spare ribs which are just slices of Boston Butt.  Treat them the same way as a butt and slather them (plain yellow mustard or experiment with mustard slathers or flavored mustards) and apply the rub.  Cook for about 1.5 hours and try to see which rubs you like the best.  Beats waiting 8 hours for a butt to finish up and realizing that the rub was horrible especially if you are having people over (of course why are you using untested recipes on unsuspecting guests).   Oh yeah make sure you have a way to determine which rub is which when they are on and off the smoker.  There is nothing worse than pulling 8 different rub varieties off and realizing you can’t remember which one is which.
