Maple bacon ice cream

Well first things first Indianapolis Colts’ fan here and there is always next year.  So be it and hats off to San Diego for playing a good game. 

Anyways, been loving the ice cream maker and after seeing Michael Symon do a bacon ice cream in the first Next Iron Chef I have been dying to try this (I hate to say this but it is probably one of the key factors for my decision to get the ice cream maker over the pasta maker).  The inspiration to use maple ice cream came from this post by Michael Ruhlman in his blog I was actually just going to stick with regular vanilla.

The taste is amazing and is by far one of my new favorite ways to eat ice cream.  I think my next venture into ice cream is going to be in the way of basil ice cream.  I had some awhile ago at a restaurant and loved it.

For this recipe you are going to need:

  • 1/2 cup 100% maple syrup (not that over processed Aunt Jermima b.s.)
  • 2 cups heavy cream
  • 1 cup whole milk
  • 4 egg yolks
  • pinch of salt
  • 1/2 lb of bacon cut into 1 inch dice

Over medium-low heat put the cream, milk, maple syrup, and the pinch of salt into a saucepan.  Bring this mixture just below a boil.

Beat together the 4 egg yolks in a separate pan (I just used the KitchenAid with a wire whisk and speed 1).

Add in 1/2 cup of the hot cream mixture into the egg yolks while whisking away (once again I opted to use the KitchenAid).

Once that 1/2 cup has been incorporated slowly add in the remaining mixture while whisking away.

Once the mixture has been incorporated return the cream and yolk mixture back to the stove over medium heat.  Whisk until the mixture is thick enough to coat the back of a spoon.

Once the mixture is thick enough strain it into a bowl, cover, and place in the fridge overnight.

Over medium heat place the chopped bacon in a pan and cook till crisp.

Once the bacon is cooked remove and place on paper towels.  Pat it dry and place in the fridge for a couple of hours.  We want the bacon cold before folding it into the ice cream.

Once you are ready prepare your ice cream maker per the instructions and pour in the cream mixture.  If you are using the KitchenAid that means attach the freezer bowl and the paddle attachment.  Turn the speed to 1 and slowly pour in your cream mixture. 

Let this run till it is done (for the KitchenAid about 15-20 minutes) and then fold in the bacon.

Transfer the mixture to another container and place in the freezer for a couple of hours to harden up.

Serve and enjoy maybe drizzled with some more maple syrup.
