Root vegetable mash
Want a quick simple easy side? Want to be able to justify the purchase of the ricer to a loved one as just not a way to make the world’s greatest mashed potatoes? Well tada I present you with the root vegetable mash.
For this dish you will need:
- 1lb of celery root cut into 1 inch cubes
- 3 parsnips cut into a large dice
- 3 carrots cut into a large dice
- 4 tb of butter cut into slices
- 1/4 cup of heavy cream (hey I never said this was a healthy recipe)
- Kosher salt and pepper
Bring a large pot of water to a boil. Add in the celery root, carrots, and parsnips and bring to a simmer. Let it cook for 30-40 minutes or until fork tender.
Once cooked strain out the vegetables and discard the liquid.
Set up your ricer over a saucepan. Put some of the mixture into the ricer and squeeze. Repeat till the colander is empty and the pot is full of fluffy vegetables.
Return the pot over medium-low heat. Add in the cream and butter and stir till the butter is melted and mixture is warmed through. Adjust seasoning with salt and pepper.
