Tequila lime chicken
Back to freezer cleaning we go and this meal was another package of chicken thighs that dear god how did I manage to acquire???
We are in full fall swing with 60s and all that good jazz so I decided time to fire up the charcoal grill. One pure joy of the charcoal in the fall is uhh…it gets dark pretty early so can make seeing the food pretty tricky. I know a simple flashlight would solve this problem but do you think I actually have batteries for the one flashlight I own?
For this recipe you will need:
- 1/2 cup tequila
- 1 cup lime juice (about 5 limes)
- 1/2 cup orange juice (about 1 orange)
- 1 TB chili powder
- 1 jalapeno diced
- 3 cloves of garlic thinly sliced
- Good glug of olive oil
- Kosher salt and black pepper
Mix all the ingredients together in a large bowl, add chicken, and set in the refrigerator for 2 hours.
Using your favorite grill and cook the chicken till done through. If you lack a grill a 400 degree oven will work also. Chicken thighs take a lot longer than boneless skinless tasteless chicken breasts and these were under medium heat for about 25 minutes.

That nighttime grilling shot is great! I am ashamed to say I use a gas grill, but ease of use, gets me every time. I also plug in my electric smoker, shameless, I know.

tequila lime chicken is one of my favorites, and i like how you’ve done it. and now i wish i had a fireplace. or a grill, at the very least.
Often when I make tequila lime chicken, I cheat and use the Lawry’s bottled marinade to save time.
