Honey Chipotle Chicken

It has been awhile since I have fired up a grill and I did this dish with the hope of being able to grill the chicken.  Little bit of knowledge I feel I should pass on is if the weather is -20 degrees the grill will not hold a temperature no matter how hard you try.

In order to fake that good grill like charring of the thighs after they were cooked I put them under a high broiler for a couple of minutes.  This allowed the skin to get crispy and provided some blackening.

For this recipe you will need:

  • Chicken thighs(I know shocked I went with thighs again but I love them so much more than breasts)
  • 2-3 chipotle peppers in adobe sauce
  • 3 cloves of garlic
  • 1/4 cup honey
  • 1 TB stone ground mustard
  • 1 teaspoon chili powder (I used ancho)
  • Dash of apple cider vinegar
  •  Kosher salt and black pepper

Combine everything but the chicken in your blender and take for a spin.  Taste and adjust by adding whatever you think is necessary like maybe another chipotle or some honey.

Pour the marinade over the chicken and let it rest for a couple hours or overnight.

Preheat your oven to 375 degrees and put the chicken in there oven till done (for thighs about 30 minutes).  Remove from the oven and turn your broiler to high.  Put the pan under that for a couple minutes (basically you want the chicken to be blackened in parts).

Serve and enjoy!

  2. I love chipotle, it can be addicted. I can imagine how delicious this chicken dish, the sweetness of honey and the the spicyness of chipotle sound like perfect together.

  3. It makes me want to get my knife and fork out and take a little bite…very nice…funny but today I was going to make my ground chicken meatballs with honey-chipotle sauce…great minds think alike.

  5. i’ve heard so much about ahipotle in adobo, that i really must find out how to pronounce it properly! this is the sort of thing we can’t get in a small mediterraean island town…

  6. My favorite part too. If you couldn’t get heat from the grill, I like that you added it to the marinade.

  8. ohhhh. i have recently discovered adobo and am in love with it!!! it looks so tasty and is really making me miss summer cause i would totally make this on the grill!!!
