Jamaican jerk pork chops
I have a passion for spicy food and this dish is a great balance of heat and swet. I like to serve it with a slice of grilled pineapple to add to the sweetness.
For this dish you are going to need:
- 4 thick cut pork chops
- 1 onion cut into large slices
- 4 cloves of garlic large dice
- 1 habanero pepper quartered (relax the heat of the habanero is muted by the sweetness from the spices but if you must feel free to substiute a jalapeno).
- 2 tb kosher salt
- 1 tea black pepper
- 1 tea allspice
- 1 tea nutmeg
- 1 tea cinnamon
- 1 tb fresh thyme leaves
- 1/4 cup worcestershire sauce
- 1/4 cup white wine vinegar
Basically you basically throw everything but the pork chops into a food processor or blender and mix till all combined into a paste.
Pour the mixture over the pork chops and let it marinade overnight.
I like to grill these so when you are ready fire up your grill to high. Place the pork chops on the grill and cook for 4 minutes. Rotate it 90 degrees and cook for another 2 minutes. Flip and cook for another 3 minutes. The reason why we rotated the pork chop was to give it a nice criss cross look on the presentation side. If you don’t have a grill feel free to throw them in a 350 degree oven till an internal temp of 145 (about 20-25 minutes).
