Roasted pepper chicken
This was something I just threw together one night when I was staring at some colorful peppers and wanted a quick meal.
For this dish we are going to need:
- 3-4 boneless chicken breasts trimmed of any extra fat.
- 3 peppers (I like to use red, orange, and yellow for more color).
- 1 poblano pepper
- 1 onion sliced thinly
- Couple ounces of pancetta diced
- 1/2 cup of white wine
- 1 cup of chicken broth
- 1/2 cup of sun dried tomatos diced
- 3 cloves of garlic
- Cup of mushrooms sliced thinly.
- TB of butter
- Salt and pepper
First thing first we want to get the skin off the peppers. My favorite way is just to get out the propane torch and blast the skin till it is black all over.
If you lack a torch and have a gas stove or grill just throw them on a high burner and turn till they are blackened all over. Lacking that just throw them in a 450 degree oven and turn a couple of times for about 15 minutes.
Once they are black all over remove and place in a bowl and cover.
After about 10 minutes remove them from the bowl and the skin should just fall off the pepper. Remove the top and then remove as many of the seeds as possible (a few will somehow sneak in). Cut them into strips.
In a hot pan place the pancetta in and stir around to crisp it up. Once the pancetta is crisp, remove from the pan, and set aside.
Add in the TB of butter, salt and pepper the chicken breasts on both sides, and place in the pan once the butter has melted for about 3 minutes a side. Remove the chicken and set aside.
Add in the onions and cook for about 5 minutes or until softened. Add in the garlic and stir for another minute or so.
Add in the mushrooms and lower the heat till medium. We want to cook a lot of the moisture out of the mushrooms and this will probably take about 8-10 minutes.
Once the mushrooms have cooked down add in the 1/2 cup of white wine and scrape the pan to release all the stuck bits. We want to cook the wine down by 1/2.
After the wine has reduced add in the chicken broth, tomatoes, pepper strips, and the chicken. Place in the oven till done (about 20 minutes).
Serve and enjoy.
