Chicken Broccoli Stir Fry with Hoisin Sauce

Like this dish this post is going to be quick and to the point.

Stir frying is one of those things that is simple but easy to screw up if you are not prepared.  The main thing to remember is everything needs to be cut up and in arm’s reach because once you start it turns into this Zen like throwing ingredients into the wok.

For the sauce you will need:

  • 1/4 cup hoisin
  • 1/4 cup soy
  • dash of sesame oil
  • dash of chili paste

Combine everything, taste, and adjust.

For the rest of the recipe you will need:

  • Couple pounds of chicken diced up
  • Bunch of broccoli crowns
  • 1 red pepper cut into large pieces
  • 1 thumb size piece of ginger finely diced
  • 2 cloves of garlic finely diced
  • 1 small can of water chestnuts drained
  • Kosher salt and black pepper
  • High temperature oil (I used peanut)
  • Dried red chili aka chili de arbol (optional but I love spicy food so a handful of these bad boys have to go in)

Place your wok over medium-high heat and add a good squirt of the oil.  Toss in the chili de arbol and stir around for 30 seconds.  Add in the chicken with a good pinch of salt and pepper and cooked till the chicken is cooked through (5 minutes or so).  Depending on the size of your wok and the amount of chicken you might need to do this in 2 batches(remember overcrowding the pan is bad).

Remove the chicken from the wok and add in the broccoli and pepper and cook till it is heated through (3-5 minutes).  Toss in the garlic and ginger and cook for another minute.

Toss in the water chestnuts, chicken, and sauce.  Toss around to coat everything and cook for a couple minutes.

Serve and enjoy!

  1. stir fry is one of my favorite weeknight dinners. it’s so filling and flavorful without taking hours to make. plus, it’s super easy to make leftovers! yours sounds great! hoisin sauce is such a wonderful thing, huh?
