Mojo Pork Chops
Before I start this post I must say a quick prayer to the coffee gods. I am running on lack of sleep and my level of insanity is not all there. This post could have the world’s worst introduction so bear with me. I will try to bring it together near the end or at least go down in a brilliant display of flames.
How many out there in blogville are going to stop eating pork because of swine flu fears? It has not slowed me down and it reminded me I need to put my order in for my fall hog pick up from my favorite farmer.
Holy crap this is horrible and reminds me of a joke.

I really do not think I am going to save this introduction. I know a normal person would just delete this draft, walk away, regroup, and come back. Anyone who knows me will tell you I lack that ability and instead prefer constantly running into the brick wall until the brick wall gives in or I fall over in pain.
One last ditch attempt…
In Cuban cooking a mojo sauce is any sauce made with citrus juice, garlic, and oil. Not a whole heck of a lot of ingredients but does everyone really need a 20 page ingredient list to make a good dish? I believe the key to any good dish is using the best possible ingredients and combining them in a proper way.
The amazing thing about a mojo marinade is that the citrus plays perfectly with the pork and imparts a light flavor throughout the meat. Bonus points are awarded for using a charcoal grill because then the meat not only has that great citrus flavor but a great smokey flavor too.
That is honestly the best I think I can do today. I give up and the bloody wall wins again.
If you are still reading this train wreck I commend you and will leave you with another bad joke for your time.
What happens when two snails fight? They slug it out.
For this marinade you will need:
- 1/2 cup of orange juice
- 1/4 cup of lime juice
- 1 teaspoon cumin
- 1/4 cup of fresh cilantro
- 4 cloves of garlic
- Pinch of dried oregano
- Pinch of salt and pepper
- 2 tablespoons of oil
I like to use a food processor and whiz everything together until the garlic and cilantro is fully chopped. Pour over some pork chops and let it relax in the fridge for a couple of hours.

Fire up your charcoal chimney and when all the coals are lit dump it into your charcoal grill.

I am bummed because the camera did a horrible job of displaying the coolness that was flames shooting out of the top of the chimney.
Grill the pork chops for a couple minutes a side until they are done. The total time is going to be dependent on the thickness of the pork chops. Mine were about an inch thick and was about 4 minutes a side with the lid off.
Serve and enjoy!

I really liked this post. It was a brilliant display of flames. Can you tell I am sleep-deprived as well? I plan on setting up an IV so that I can have a direct line of coffee into my veins. Probably better in principle than in actuality, however. I don’t want to literally be throwing myself into walls.
I really like this dish. Mojo sauce has such a good flavor and you’re right - quality over quantity. Sometimes having more ingredients can just lead to a huge train wreck of flavor incompatibility. And a not-so-brilliant display of flames.

I agree that sometimes just a few ingredients are all you need. I think a major mistake beginner cooks make is to take every herb and spice in the rack and throw it into a dish. All you need are a few good flavors in most dishes (Indian and Thai food excepted of course). I’ve even learned to practice restraint with garlic. There was a time when everything I cooked had to have garlic. Now I’m learning that there are other flavors out there that want to shine through sometimes.
This looks delicious, even to me! I love a mojo marinade.
Are people really not eating pork because of the swine flu? Do they not understand how flu is transmitted? Feh. It’s crowds they should be avoiding, and people conspicuously blowing their noses and sneezing and coughing. Not pigs. Especially not once they’re grilled!
Your intro was perfect! My kids are going to love the snail joke too, lol! Wow, the marinade sounds amazing and I definitely need to try this with pork as it is not my favorite in the first place yet the hubby insists on it.

Luckily they say you can’t get swine flu from eating pork products. That’s what they say at least. I’d wither if I had to give up pork.

From what I’ve heard/read—one cannot contact swine flu from eating properly cooked pork. Marinated in a mojo and I’m all over it. To the grill!

very nice. this is an excellent marinade for a big ole pork butt or pork shoulder. but don’t just marinate for a few hours - give it at least overnight if not 24 hours.
Thank you for visiting my recipe page. I took a look at your self described train wreck and got a good chuckle. I’m going to “steal” the joke about the snails slugging it out (for my grandkids) LOL. Crockpots fell out of favor for a while because they were so hard to clean, but now that the ceramic liners come out and go into the dishwasher, I use mine a LOT. I hope you try the refried bean recipe. It is embarrassingly easy.
Speaking as an insomniac, I sympathize….the stream of consciousness intro was perfect. Speaking as one of the few that aren’t paranoid, you can’t catch swine flu from eating pork so continue to…err…pig out. Speaking as a Cuban, great job. We often use something called “naranja agria” in our mojo (pronounced mo-ho) which may be difficult to find depending on where you live, but it’s much better than just OJ because it adds a level of “sour” that regular juice can’t give because it’s so damned sweet. Nice finishing pic, too, dude!

I am not going to stop eating pork because of the swine flu. They just changed its name because it is not transmitted among pigs and there is no risk of getting sick as long as you cook your meat properly, which you did an amazing job whit this marinate.
