Veal liver and onions

Ok not a dish for everyone but if you want to be adventerous this is a fun one to try.
 For this dish you will need:

1 lb veal livers 
1 onion sliced thin
1/2 cup + 2 tb sherry
2 tb of butter
Extra virgin olive oil
All purpose flour
Kosher salt and black pepper
Parsley for garnish
