Arroz Con Pollo

Arroz con pollo is Spanish for rice with chicken.  It is chicken browned and then simmered in a tomato sauce with whatever vegetables you choose to make it with.  There are thousands of different variations so add flavors that you really enjoy.  Besides being flavorful it is also a very simple one pot meal that takes little […]

Bacon wrapped cod with rosemary and lemon

Ok I have to admit I was a tad bit skeptical when I stole this dish from Jamie Oliver’s book “Cook With Jamie“.  This book is definitely worth picking up and has a lot of great advice and more importantly amazing recipes.
The recipe calls for white fish and the only white fish I could find at the store […]

Sun-dried tomato and basil pesto stuffed pork tenderloin

Ok so today I got a great laugh from Bourdain’s blog about the Food Network reairing A Cook’s Tour and the latest episode of No Reservations (the Dunkin Doughnuts crack had me on the floor).  This was definitely well needed especially since this week has been brutal.  Well not really brutal just stressful work but hopefully […]

Steak au Poivre (peppercorn crusted steak)

Did you have a stressful day at work?  Do you feel the need to smash something and are on parole and don’t want to go back?  How about light something on fire with reckless abandonment?  If you answered yes to any of these then I have the perfect dish for you.
I should preface this by […]

Spicy sausage lettuce wraps

Hope everyone survived New Year’s Eve and had an awesome time.  I ended up having my yearly party and the theme this year was BBQ.  Did some brisket, pulled pork, and ABTs (this was the vegetable plate till someone had to ruin it and actually bring a vegetable plate).  The joy of living in a […]

40 garlic clove chicken

For those of you who don’t think that attitude affect the end result trust me it does.  This entire cook process I felt rushed and in no rythmn.  No matter what CD I put on I could not get into the “groove” (I went from Joe Henry, Ryan Adams, Whiskeytown, Wilco, to L.L. Cool J).  So […]

Horseradish cheddar canadian bacon macaroni and cheese

I feel bad I do all these bacon and pork dishes but I never do anything that shows our northern brothers and sisters the respect they deserve for giving us Canadian bacon (yes I know canadian bacon is not from Canada and it is actually called back bacon) so tonight I decided to do that.  […]

Morimoto’s Angry Chicken

If you do not own Morimoto’s “The New Art of Japanese Cooking” I recommend you order it immediately.  This cookbook is full of many many great recipes and many great tips.  Plus hats off to a man who can be quoted as saying “I’ve purchased whole tunas that cost as much as a BMW” and […]

Jamaican jerk pork chops

I have a passion for spicy food and this dish is a great balance of heat and swet.  I like to serve it with a slice of grilled pineapple to add to the sweetness.
For this dish you are going to need:

4 thick cut pork chops
1 onion cut into large slices
4 cloves of garlic large dice
1 […]
